Inspired by the Zen proverb Matsu ni kokon no iro nashi, meaning, “The color of the pine is unchanging and everlasting,” this light-tasting sake is brewed with pure Kyoto groundwater and Yamada Nishiki rice grown in Tojo in Hyogo Prefecture.
