Japanese sakes may all look very much the same, but each is distinctive in its own way. Inspired by the Zen proverb Matsu ni kokon no iro nashi, meaning, “The color of the pine is unchanging and everlasting,” this light-tasting sake is brewed with pure Kyoto groundwater and Yamada Nishiki rice grown in Tojo in Hyogo Prefecture.
